homemade spaghetti sauce

made some spaghetti with tomato sauce last night. its my go to meal when i dont want to spend forever cooking.

Tomato Sauce with italian sausage

28 oz can fire roasted tomatoes I like muir glen organic) (you can use plain diced tomatoes to save some money )
1 lb mild italian sausage
1/2 lb sliced mushrooms
1 large onion diced
6 cloves garlic minced
1/2 cup red wine
1/4 cup chopped fresh basil (or more if you wish)
1 tsp ground fennel seed
2 bay leaves
2Tbsp olive oil

in a large skillet heat the oil. add the sausage and fennel seed. cook over medium high heat 4 minutes. add the onion and mushrooms and continue cooking until the sausage is browned.add the garlic and saute 1 more minute
add the wine and cook until 1/2 is evaporated
add the tomatoes and bay leaves and bring to a boil
cook over medium heat,stirring occasionally until the sauce has thickened nicely (30 minutes or so)
add the basil and cook 5 minutes more

if the sauce appears to thick add 1/2 cup of the water you cook the pasta in to thin it out before spooning over the pasta

makes enough sauce for 1 lb pasta
