What's for Dinner, Thurs., Feb. 13



For many of us in the northeast and the south, it's a snow day. Good time to do some cooking, assuming one has power.

I'm going to make a thick, hearty tomato sauce and serve it with tortellini.

Home made chicken and lentil soup for me, with sesame bread croutons. Chicken is defrosting right now.

And lots of hot chocolate.

There are so many different types of chicken and lentil soup recipes. Could you guide me to the one you used?

I don't measure much so here are some approximations.

1 pound of chicken thighs cut into small pieces
2 shallots chopped
2 cloves of garlic minced
1 pound of carrots chopped
1 whole stalk of celery chopped
12 oz of a pale ale. Magic hat #9 was my choice.
48oz of chicken stock
1 tbsp celery seed
1 tbsp dried thyme
1/2 cup of lentils (mine were French)
Water
Salt

I sweat the shallot in about 2 tbsp of EV olive oil, then sear the chicken. At the end of the sear I add the garlic careful not to let it burn. I deglaise with the beer, then add the remaining ingredients except the lentils. I top off the ingredients with the water, bring to a boil, then down to a simmer. I simmer slowly for about two hours, then add the lentils to cook for another hour. Salt to taste.

House smelled awesome.

But, oh, damn! I'm going to have to buy some beer. (Hate when that happens!) What ever will I do with the remaining beer?

Some of the Indian and Moroccan style recipes I found sounded pretty good too.

There are some interesting places to eat here and I haven't been to any yet.

The boat is supposed to get in tomorrow and I want to make them dinner when they arrive, so this is my opportunity to eat out!

cold finally broke and we'll be in the 50s today. i'll probably take a break from cooking tonight and just do some annie's mac and cheese or bust into the chicken strips in the freezer.

We were not supposed to get any snow from the storm that is hitting you; however someone made a horrible miscalculation and it has been snowing here for nearly five hours. I was in town (20 miles away) grocery shopping and nearly wrecked on my way home. I think I lost five years of my life .

glad you made it home safe.

we got three feet of snow on st. patrick's day in 2003, so much snow the newspapers couldn't be delivered. the front page story that day was that the storm was going to miss us.

Snowy here today too, and I feel well enough to tinker, so I am digging out some paper and paint and staying out of the kitchen as much as possible!

Turned out so so, not exactly the fried chicken that I crave from a place a bit away. Should go there soon and satisfy my urge. It's just that getting out to the street through the alley is such a pain with all the snow.
