It's cooking now and I hope I started earlier enough to get it good and chilled.

And probably some simple quesadillas on the side with a little fresh guacamole.

And, of course, one (or two?) of my margaritas, which I dare say I have perfected, lol!

Standard mushroom soup type "Betty Crocker" type recipe.....but "kicked" it a bit with a fair amount of dried chopped onions, 4 oz. of sliced mushrooms (drained) and a 4 oz. jar of pimentos (drained). Added a bit more milk that called for to reconstitute the dried onions and gave it a healthy dose of freshly ground pepper. Topped it with a butter/panko crust.

I used Cream of Celery soup, and I added crushed potato chips on the top (sprinkled with a little melted butter.)

It was a really good meal. It's like comfort food to me.

...... but I like 'em. They are good comfort food. Not "haute cuisine" ..... but damned good!

I try to stay away from potato chips (because I have no self-control and they are high in sodium), but that topping sounds good. Other toppings I thought about are French's onions, and chow mein noodles.

The dehydrated onions work very well in these casseroles. Give a little texture along with great onion flavor.

The pimientos also added a lot. I should have also added some raw chopped celery.... but didn't think of it at the time.

The Campbell's "cream of" soups are pretty interchangeable in most recipes (maybe with the exception of cream of potatoes).

Zatarain, based in New Orleans, markets a line of packaged rice mixes. Some are really good, especially for a simple one pot meal. I just seared fish fillets well w/spices in a pan, pulled them off and set the rice mix to boil in the same pan. Once at a simmer, I put the fish on top and covered.

made a rub with brown sugar,paprika,cumin,chili powder,onion powder,garlic powder,black pepper,salt and cayenne

indirect heat for about 90 minutes or so

Lobster, shrimp, clams, mussels, squid in spicy tomato sauce and served over yellow rice.

I didn't make it. I got it from our favorite Spanish restaurant in the Ironbound.

I wish I had the energy to make a spinach-mushroom-Swiss cheese quiche for breakfast tomorrow.
