It seems like New Years Day was yesterday.

Tonight will be baby back ribs on the grill. Just made a mac salad, and I've got some baked beans waiting in the wings. I did a dry rub on the ribs yesterday, and once grilled, I'll put a BBQ sauce on to finish them up.

These are really good ribs, in that the grocery store doesn't shave the meat off down to the bone. It has a meat cap! As such, A 1/2-rack is usually too much for one sitting. Looks like I've got leftovers for lunch.

going to watch the Oscars at a bar. We live in a small town that was still dry not too long ago. The only bar in town is a biker bar with zero hospitality charm, even as dive bars go! Have fun!

The one here caters to ex-pats and has a decidedly american sports bar feel, but tonight will be a bit more "sophisticated" (I hope).

Also, because my SO cannot resist buying GIGANTIC packages of meat and freezing them without breaking them into smaller portions. Ergo, when it's time to cook with the meat, we have to thaw all of the (6 lbs of chicken thighs/three 3-lb pork roasts/10 lbs of hamburger) and cook it all at the same time or it will go bad.

So tonight we will cook a pork loin roast (which I am sick to death of, this being the fourth damn pork roast from one of his bargain packs), and make two dishes out of 6 lbs of chicken thighs. I'm making a slow-cooker white chili with half the chicken thighs but have no idea what to do with the other half. Thinking I might just bake them and strip the meat to make a quickie casserole or something. What DO you do with thighs?

What can we do?

6 pounds of thighs is a whole lot of thighs.

You could make a broth by boiling some of them just for 45 minutes or so. That would leave the meat still tasty and it could be used for lots of things - enchiladas, soup, chicken salad, sandwiches, and you would have the broth.

You could grill or broil some of them and eat them right away, otherwise the skin is just going to waste.

Between you and I, hate it when the Oscars come over. Have to doff the sweat pants or jeans and raggedy t-shirts. Wash every freaking dish in the house. Get into a suit, tie, shined shoes, etc. etc. Tell the neighbors to keep their territorial disputes to a minimum.

The list goes on.

I actually really enjoy the Oscar Awards. Watch them every year. I hear there's a black and white film up for an award this year. That'll be interesting.

And I even bought a new dress for the occasion. It's an original from the local Sunday market - a deep shade of blue with areas of a lighter blue sewn in with gold thread. Quite stunning, but a little see through. I am thinking I will need some leggings for modesty's sake.

Anyway, I have my picks and am heading out to a local bar in just a few moments.

Have some champagne for me!

It was good...... but I wish I had read your post about frittata with roasted red peppers.

I like that idea! And chorizo instead of plain sausage.

I ended up grilling the chorizo and serving it on the side, since I feared it would overwhelm everything else. I'm glad I did that.

.... the crunchier the better.

Left overs make great chicken salad and other dishes calling for pre-cooked chicken.

I try to keep both pork and chicken shake & bake on hand....... but I wonder if there is really any difference between the two.

While not "health food", ..... it's probably healthier than fried chicken. And it's extremely easy to make.

You should give it a try.

Shake and Bake Mix

1 cup finely crushed corn flakes
1 tablespoon flour
1 teaspoon salt
1 teaspoon sugar
1 teaspoon crushed parsley flakes
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dry mustard
1/2 teaspoon celery salt

Mix well.
Store in airtight container.
Use to coat chicken and pork before baking.

Doesn't sound too unhealthy and the worst items in there is the sugar or salt, which one could halve. Considering that it makes four servings, I think I'd prob'ly leave it as is.

The vegs are red, orange, and yellow pepper and zucchini and onion.

Made the rice already.

I have a terrific recipe for thighs. Will come back and post it later, after I find it.

Probably some Chinese dumplings for an appetizer.

I forget what it is called, but it was almost like a yellow curry...but not quite and it had vegetables and rice noodles. After sitting for a while it was more like a thick sauce than a soup but it was really good. The sticky chicken was just Chinese 5-spice on chicken breasts, then blackened and drizzled with honey, lime juice and sesame seeds.
