Kedgeree

I made a chicken in a slow cooker. It was great but with just two of us, we have a great deal of leftover chicken. After watching some Downton Abbey this weekend, I was thinking of trying to make kedgeree, except with chicken instead of fish. My plan is to cook some onion in butter and then add a bit of curry powder, chopped leftover chicken, and leftover basmati rice, heat the mixture, and top with chopped hard-boiled egg. Does this sound edible?

1. Haven't checked kedgeree recipe, yours sounds fine.

Been watching Downton, but have curry sauce recipe from James Beard, and use it often for leftover chicken. Sautee onion, garlic, other aromatic vegs around, add can of tomatoes and curry powder to taste. Serve over rice, and with yogurt and chutney.

I found it in Martha Stewart's Menus for Entertaining cookbook. I haven't made it, but it looks absolutely delicious. It's a sort of warm tossed salad of chicken, potatoes, and vegetables, all shredded.

2 medium onions
2 T EVOO
3 whole chicken breasts
4 cloves minced garlic
1 tsp coarse salt
1 tsp ground pepper
1 T sweet paprika
1/3 cup rough chopped parsley
3 scallions, chopped
1 pound green beans, trimmed
2 pounds carrots
5 pounds white potatoes
vegetable oil (for frying grated potatoes)
1/2 cup mayonnaise

I'll transcribe the directions if you want them. Basically, the chicken is cooked with one of the onions, EVOO, garlic, salt, pepper, paprika, and 3 cups of water. Then parsley and scallions are added and cooked for 5 minutes. Shred the chicken and set aside. Grate the carrots, add the remaining onion sliced thin, set all aside and chilled. Potatoes are grated, dried in towel, and fried til golden brown, drained. Then everything is tossed together and served immediately.

3. Salpicon - Mexican Style

It is a traditional Mexican cold meat salad that is so good and a great way to use left over beef pot roast. it can be made with leftover chicken. This is a great party food

Shred meat with two forks. If you have any left over potatoes from your roast, chop them and add to meat. Add chopped onion. Some chopped pickled jalapenos are optional. Make a simple dressing of 3 parts oil to 1 part vinegar, seasoning with salt and pepper and a pinch of dry mustard. No measurements, make enough to moisten the meat mixture. If you don't want to make your own dressing, use bottled Italian dressing. Some people add cheese (cheddar or Monterrey Jack) cut in small cubes.

Cover and refrigerate for several hours or overnight.

To serve, line a platter with lettuce leaves and heap the salpicon on the lettuce. Surround the meat salad with sliced radishes, avocado slices and tomato wedges.

Serve with small corn tortillas or tortilla chips.

5. What I wound up doing

I think what I finally made is actually nothing like Kedgeree anyone from Downton Abbey days would recognize--I replaced the fish and the eggs with chicken and added some red pepper. Anyway, I made a fairly decent curry rice and this is how I did it.

I heated a gob of coconut oil--the virgin kind that smells of coconut--and added a chopped yellow onion, a chopped sweet red pepper, a bit of salt, and a half teaspoon or so each of cinnamon, curry powder, and cardamom. Then cooked this until the onions were soft and added a bowl of leftover basmati rice plus some chopped leftover chicken and heated the mixture. Wasn't bad, but next time I'll up the seasoning and maybe add some heat with jalepeño peppers.
