My local butcher makes an excellent meat loaf mix which I'll be using. I modify and extend it a bit by adding chopped onions, a dash of Worcestershire sauce, some catsup/sri-racha mix, an egg and panko.... before stuffing it into the peppers.

Just got back from the only shop within 30 miles to have sharp provolone cheese, which will be quite yummy on the sub. Gotta love leftover meatballs and sauce!

I was going to have a salad on the side, but decided that would be today's lunch instead.

What kind of herbs do you use in your pea soup, if you don't mind my asking.

Can you believe I have never had pea soup before, ever, in my whole life?

Split pea soup, either.

I thought of you last night when I was going through Enchanted Broccoli Forest and Moosewood Cookbook. I made "broccoli and friends." It was so good! I put it in wraps instead of as a sammich. Then I served it with roasted tomato cream sauce.

The herbs are tarragon and thyme . I had to use dried herbs.

Broccoli and friends in a wrap sounds great!

Smoked sausage and roasted potatoes from earlier dishes, browned in butter. Greek salad, re-tossed with some more tomato. Hummus.

I bagged that idea. It's too hot and we had guests.

So I used the chicken to make smothered burritos and the smother was my green salsa.

Came out great and I have two left over for tonight.

We have moved to an isolated area where it is difficult, but not impossible, to access the land. I'm pretty sure I have everything I need for about a week, but we shall see!

I asked a friend to divulge her family recipe for what they call sweet tamales. Really good. Basically rice, dried fruits, cinnamon, coffee, brown sugar. And some other stuff? It's an Easter treat.

Asian chicken thighs. The sauce has OJ, soy, ketchup, brown sugar, etc.

For a salad, I'm also making an Asian dish. It has snow peas, peanuts, lots of coriander and basil, noodles, and cucumber..

I'm pretty sure I'm a reincarnated Japanese person. Given a choice, I'll go Asian every time.

I've had this little old toaster oven for forever … love it. It's just the right size for my recent favorite dinner: bread (whatever's in the fridge), a layer of thinly-sliced or shredded Monterey jack, chopped or sliced fresh tomato, topped with more cheese. Crank toaster oven up to broiler mode and let the cheese melt and get ever so slightly charred on the top (or until i smell something burning).

Simple and wonderful.

What other kinds of cheeses would you recommend I try next time for this or a cheese pizza?

Blue cheese or gorgonzola, chopped scallion, and toasted walnuts.

Monterey Jack, roasted peppers (can be from a jar), and little pieces of shaved turkey.

Grapefruit, oranges, a couple of lemon and lime wedges. Tossed with fresh mint and dill. Some mixed greens on the bottom. A big dollop of yogurt on top.

That's dessert.

It came out pretty good.
marinated, baked, sliced thin, and then briefly pan fried

The spices are the key.

The kids have tomorrow off school.

It was a mish mosh of Asian cuisine tonight. We had yellow thai curry w/shrimp (made from scratch, no store bought paste...I haven't found one good enough yet), chow mein noodles, rice, sesame sauce (cloned recipe from Japanese village restaurants) and a huge bowl of stir fried veggies.

My kids were happy, they loved everything about dinner tonight. It's been awhile since that has happened, LOL.
