there is also a cake from a Food Network challenge... a contestant baked a cake she called Put the Lime in the Coconut Cake. It is divine...

A bit more complicated than this cake but heavenly... the cake batter is the smoothest I have ever made and the icing is delicious.

really like the dessicated coconut on the telegraph recipe. I suppose this means that I will have to bite the bullet and try both. Oh the inhumanity.

I feel for you... it's a hard thing to do but you just might have to try both.

I have made the recipe I posted numerous times and it makes an impressive looking cake and I got rave reviews for it.

Hope you enjoy which ever one you choose... nothing better than lime and coconut!

I've never seen or heard of that. I can get sweetened, or unsweetened coconut. Both are slightly dryer than they would be from a fresh coconut, but are still soft.
