New from Lidia, potatoes, onions + cherry tomatoes baked

slice onions + pots, layer in baking dish lined w o.oil; sprinkle w oregano + salt
halve cherry toms, sprinkle w oregano, salt, o.oil, place on top of pots + onions
Sprinkle w grated cheese

450 degree oven 30? minutes

Lemme know how it is, if you try it before I do!

i think that would be good with all sorts of proteins, but it sounds good with salmon.

To me they always taste sour.

I suppose I could try this without the tomatoes, or maybe even with regular ones, somewhat thickly sliced.

What kind of cheese would you grate?

I also might want to add celery seed. That's one of my go-to seasonings and I think it might work well here.

Wouldn't have to be thickly sliced, but fine if the taste is right. She scattered the halved cherry tomatoes over the top kind of randomly, not thickly over all.

I think she used parmesan, and its my favorite, especially if its the good, fresh parmesan. She may also have said pecorino is ok.

Celery seed would be good, I think. I use celery often.

Actually quite simple and can be varied quite a bit.

It's making me think of my scalloped potatoes and ham which I just adore. I use lots of ham. The only problem is that it doesn't make very good leftovers, and I live alone, so fixing a portion for one is hardly worth it.

I do love to cook. I do love my own cooking. I am very fortunate I don't weigh at least 400 pounds. And if anyone reading this weighs that much, please do not take it as a personal insult, but rather as understanding how sometimes people get massively larger than they should be.

Actually, I use the basics from this recipe (at about 375 degrees) but add slivers of boneless chicken as I toss the ingredients. Tastes great. The little garlic I use adds a little zing. Great reheated in a covered dish in the microwave for a couple of minutes.

Made the entire dinner Lidia had on her show last night (salmon with prosecco, carrots and granny apple salad, and potatoes/onion/cherry tomatoes). What a great dinner and flavors of each dish completed each other so well.

I used new red potatoes (they were good but think Yukon gold would have been better). Baked at 400 degrees for about 30 minutes, think 425 would have been better for about 25 minutes or so. Used parmesan Ramona and that was good choice for cheese.

Did not use oregano and it was not missed, but it probably would not hurt either if you added it.

Recommend cutting onions (at least 2 big ones) rather thick and discard the two outer layers. The outer layers are too thin and burn and become rubbery while thicker cuts were perfect.

If I remember correctly from show, Lidia mixed the tomatoes, salt, some olive oil and cheese in a separate bowl and then spread it over the top of the potatoes and onions. That's what I did and it worked well.

Definitely a company ready dinner and very colorful on the plate.
