What's for Dinner?" Thurs., April 17

Yippee, I have tomorrow off, so I'm making:

Cauliflower-cheese soup for an appetizer.

Filet mignon for the entree'.

Baked potatoes. The idea I got at Trader Joe's tasting this afternoon when I stopped by. Mix their onion soup mix with olive oil. Dip potatoes in it and roast them.

I think I'll also be roasting some small onions in balsamic.

And of course, a tossed green salad with all kinds of colorful vegetables.

Dessert will be flan.

I'll also throw on corn-on-the-cob to the grill as well (husks on). And, since the grill is fired up, grilled potato wedges dipped in olive oil, paprika and garlic.

I'll have to try TJ's onion soup mix. Anything like Lipton's?

I normally don't buy things like that but this was so good (in the store) and it was so easy. It has a low salt content, which surprised me.

I tend to cook simply and only a few things. We are older now and don't have the big appetites we used to have.

And I don't have the energy to do that much cooking.

I made enchiladas the other night and we will be having the rest of them tonight. I hadn't made them in decades, and they were delicious.

This morning I assembled my version of the three bean salad. It's marinating today.

We'll have that tonight too.

Should be good!

Tomorrow is a busy day for me, and I don't have time to try cooking anything.

I might make a fruit salad a little later with cottage cheese. I need to use up the pineapple I bought because it is looking pretty sickly. I always sit them on the window sill so they ripen a little more than what they are at the store, and I sort of forgot about this one.
