(2,016 posts)I didn't make a ham yesterday, but I do have a ham steak. So, potatoes au gratin sounds like a great idea. Maybe I'll fold in some broccoli too.

(6,783 posts)Chicken sandwich wih lettuce and tomato and leftover beer can chicken (made wih applewood rub on the skin and mix of apple juice, liquid smoke and garlic in the can inside the carcass).
Will add a spring mix salad.
Also was gifted with an Easter cake decorated with peeps. Dad can have all the cake. Makes no sense for me to try to get fit without beng picky about my few splurges. And I think I would prefer chocolate. Or alcohol.

I am envious of everyone who has Easter leftovers. Wish I had some, but we did Easter dinner at a restaurant this year (lamb), so no leftovers for me.
I'm ill with a bad cold, so I just had TJ's roasted red pepper soup and some corn muffins, also from the store. Lemongrass tea.
It hit the spot, and now I'm going to get some rest so I can again go to work tomorrow.

(9,791 posts)We're taking a break from the Easter food tomorrow even if it's not all wiped out. The ham carcass will eventually be used for split pea or lentil soup.

(8,646 posts)I wasn't going to cook, but then I forgot I promised my youngest daughter some mashed potatoes a few days ago and she called me on it, LOL.
So, at 7 pm I started supper. We were eating by 7:20. We had pork tenderloin with balsamic glaze (a new recipe, lots of cardamom - it was interesting), cheesy mashed potatoes and green beans & carrots.
