What's for Dinner, Fri., April 25

Woo hoo!!! It's Friday!! And I get through with work at 3:15, so that gives me time to cook tonight!!

I'm thinking a big pot of Friday night soup, but may change my mind as the day does on.

I can hardly wait to start my weekend!



Goodbye to this until Monday rolls around again!

I remember how that felt and am so glad to no longer care what day of the week it is.


We are moving to a new location today, so it will be something simple when we get in.

Maybe just some ham and cheese tortilla wraps and cut up melons.

As we continue to make our way through the Easter ham leftovers (will they never end???), I'm doing a crockpot pinto bean with the meaty ham bone. Found some weirdo lentil soup mix my boyfriend bought that's been languishing back in the cupboard for who knows how long, so I added them without the spice packet. I threw in some cumin, turmeric, garlic, onion, carrots, celery, and cilantro, cooking it all up in enough vegetable broth to almost cover the ham. Completely improvisational. Fingers crossed it will be edible - it will make a lot of food!

I had something like that Wednesday evening. My friend used her Easter ham bone in bean soup. She added an onion and a couple of jalapeños. She made plain white rice to go along with it. Yummmm.

There's still some good meat on the ham carcass from Easter. I made bean soup with the last ham leftover we had so split pea soup it is!

The ham bone was much meatier than I had thought, and everything blended perfectly. May your pea soup come out as successfully!

mashed and a salad. i was going to do it earlier this week, but i wound up working really late the last few nights.
