What's for Dinner ~ Monday ~ May 26th

No clue here....we need to shop!

We've been on a Mexican food kick lately though, so it may be fajitas again! We also didn't get to the King Ranch, so we may buy more chicken and go that route.

I'm still eating chicken and fish but have dropped other proteins on my way back to veggieland.

and of course, fried onion, too. Then barbecue chicken, baked beans and a big salad.

I use semi-ripe roma tomatoes because they are firmer and have a GREAT flavor. Since I am growing Roma Tomatoes in my garden this year (and I have six already starting to form - I feel like a proud parent, I've never grown anything before!) I'll be able to use my OWN stock at some point . I'm also growing onions, too, but I don't know how soon to dig them up. I'm sure I will figure it out.

A friend made tamales this weekend. Not sure what all include, but I know 2 are vegan (she called one "sweet" the other "basic vegan&quot and the other shredded pork. She's a vegan but has no qualm with making meat for meat eaters. Just won't eat it herself.

Really nicely done with, tied with a sliver of corn husk. I'm sure they'll be tasty.

A nice trade off - I spelled her on dog sitting for a day/night, she brought me tamales when she came by to pick up the dog.



(ed to add) The neighborhood BBQ didn't come together. Got too complicated to just be a simple afternoon BBQ. LOL, I'm not real patient with a round robin of planning, planning for what could be so simple. So it's all good.

I am partial to the port and chicken ones. The sweet ones often have corn, which I also really like.

I have not yet tried to make them, but it's on my list.

Had an apartment rental all week and the food just built up.

So, will nibble for the evening and leave most for the cleaning staff who comes in tomorrow.

Hope everyone is well. I have been in NOLA at my son's wedding and it has been truly epic. To say that I am blissfully happy would be an understatement. To say that I am so, very happy that it is all over would also be an understatement.

In between rain storms, they barbecued ribs and chicken and steak kebabs. Salad, pasta salad, fruit salad.

As it turns out, it's the holiday they exchange for Mardi Gras, which I had totally forgotten.

Schools open and everything.

and it sounded like the wedding was lots of fun.

We kept trying to sit on the deck, but it seemed that as soon as we got settled, it started thundering and then a downpour would come. Of course, Saturday and Sunday were just beautiful, but this was the only day that everyone was available.

Had a good time though I ate too much.

16. Some good fish chowder

if I do say so myself thanks to my grandsons who caught 5 big beautiful fish upriver NOLA. They filleted the fish and stuffed them with great spices and pesto. With what was left over I made fish chowder with corn, potato, celery, onion, garlic, and seasoning. Just don't get much fish that fresh and tasty in Colorado!
