What's for Dinner, Mon., Aug. 11, 2014

Getting ready to leave for class.

I have in mind a cauliflower curry soup when I get home.

If cbayer sees this, my question is: I steamed my cauliflower to the point where it was done. Now I am afraid to roast it as it will be over-done. Better not try the recipe for the mayo parmesan topping, right?

That's why I'm thinking the cauliflower curry soup instead.

Next time I will be more careful to only steam for a short time.

No cooking that involves heat. Close up all the windows and turn on the fans.

I have some very good corned beef and some swiss cheese and some rye bread

Also delicious Red Top peaches, watermelon, blueberries, blackberries, and so on. So a fruit plate seems in order.

Maybe some sliced kirby cukes and sweet onion slices marinated in vinegar sugar water like grandma used to make.

slathered with curry paste, miracle whip and lemon juice. Side salad.

I'm excited - I'm within a 1/4 cup of finishing the first of the three free jars of miracle whip I got earlier this year. This is huge!

On the cauliflower, I know you didn't ask me, but roasting an already cooked vegetable doesn't seem like a good idea to me - the soup sounds like a much better plan!

Fox point seasoning (Penzey's), garlic powder and a touch of berbere seasoning. An arugula salad will follow.......

Along with RiceARoni rice pilaf. My guilty pleasure.

I was going to grill some veggies along with, then was too lazy to go to the grocery store.

On seedsation bread with hatch chili pesto, topped open faced with mushrooms and onions. So good it's the second time this week we are fixing them!

Antipasti - Melon and Proscuitto

Primo - Pasta with fresh tomato sauce

Secondo - Eggplant stuffed with sausage

And leftover fruit crumble if we have any room left at all!

How did the cauliflower work out? I think you could still roast it after steaming, but the soup idea is great, too.

It's hard to ruin cauliflower, imo.
