1. Last night in this town and the other guests are making dinner.

They have obtained some fresh raviolis (lobster and spinach/ricotta) and are making a cream sauce with sun dried tomatoes. What a treat for me.

And a spinach salad to boot.

I love being cooked for!

2. Cauliflower and onion tart

I had a slice earlier -- you know, just to sample it before serving it for family. Yeah, I think I ended up eating half the pie. OH LUCY! YOUT GOT SOME 'SPLAYNIN TO DO!!!!

1 9-inch pie crust (if frozen, take out 1 hour before and allow to thaw)
1 head cauliflower
1 large onion
8 oz pkg of mascarpone cheese
2 eggs
3/4 cup whole milk
1 cup + 2 tbls parmesan cheese
Mustard (I used whole grain, but you can use whichever variety you like)
Pinch of nutmeg
Salt/pepper to taste

Coat the cauliflower with generous amount of olive oil, sprinkle w/salt and pepper and roast in 425 degree oven for about 20 minutes. In the meantime, cut your onion in half and slice thinly, then sauté in olive oil until nicely caramelized. Once the cauliflower is a nice golden color, chop up the florets into small, bite-size pieces, then reduce the oven temp to 350.

Mix the mascarpone, eggs, milk, nutmeg, *salt and pepper together. Fold in 1 cup of the parmesan.

Now, spread a thin layer of the mustard on the bottom of the pie crust. Place the onions on the bottom, then the cauliflower, then the cream mixture on top. Sprinkle the remaining parmesan on top and bake for about 45 minutes. Voila!


* easy on the salt, as there is already some in the cauliflower, and the parmesan adds some saltiness as well.

I am surprised you were able to limit yourself to only eating half.

Fried calamari, Singapore chicken satay, Jasmine rice, cucumber salad, Thai iced tea.

And man is it hot here in CA....through Sunday they say.

using leftover meatballs and sauce I froze from the last batch. With provolone cheese. Also, a small salad on the side.

(Happiness is ... making too much food - that is freezable! Certainly helps when you come home late from work, and it's been thawing in the fridge all day.)

started with a bowl of last night's potato soup and now i'm making a kind of grilled cheese. bummed i don't have tomatoes for the sandwich.
