I accidently made the most delicious brioche

I didn't follow the recipe but ended up with the easiest, most delicious brioche. No overnight refrigerated rise, no kneading. So good with tart cherry preserves. Fantastic filled with softly scrambled eggs and smoked salmon.
Proof one package of yeast in 3 tablespoons warm water and one tablespoon sugar in the food processor. Let bubble up for 10 minutes or so. Dump into the processor, 2 1/4 cups of unbleached white flour, 1/2 teaspoon salt and another tablespoon of sugar and 3 large eggs at room temperature. Process for about 30 seconds. add 2 sticks of unsalted butter cut up and process just until the butter is mixed in. Butter a large bowl well and scrape the dough into it. Cover with a damp clean towel and put in a warm place to rise for 21/2 hours. deflate dough with flour covered finger tips (it's very sticky). Let rise again until doubled, about 1 1/2 hours. Turn out onto lightly floured board. Shape into balls and place in lightly greased molds. You can use a cupcake pan or as I did, parchment tulip molds. You can make the little top knots, but I didn't bother. Brush tops of brioche with 1 egg beaten with 1 tablespoon cream. Place into 375 degree oven and bake for about 20 to 22 minutes.
