What's for Dinner, Wed., Oct. 29, 2014

I'm experimenting with my stuffed peppers technique (roasting the pepper after I've brushed it with garlic olive oil), making different types of fillings for both red and green peppers. What I have in mind tonight are:

--ground beef with onion, feta, garlic, and spinach
--barbecue, with ground beef in barbecue sauce and topped with turkey bacon and cheddar cheese
--ground beef with onion, chipotle, tomatoes, beans

I'm also making a salad--just a tossed salad, but it will be pretty with red leaf lettuce that's still growing in the garden.

OK, so I only have taco-sized flour tortillas on hand, so I can't call them burritos, let alone burros.

Using leftover pineapple-garlic chicken and Mexican rice, and I'll throw some pinto beans in too. Some fresh chopped tomato, onion and cilantro. Must remember to not overstuff...

Sometimes I'll roll them around in hot oil to get a little brown to the wrap.

Topped with slivered almonds and diced celery leaves. Hot sauce on the side. Fortune cookie saved from a take-out meal.

The housemate bought a roll of sausage and decided to take over dinner duty tonight and made a sausage-based version of sloppy joes. Sadly, most tomato-heavy types of foods give me heartburn these days.
