Mmmmm, Banana Bread

It sure beats fruit cake! Here is my favorite recipe:

Banana Bread, makes 2 large 8" X 4" loaves

Ingredients:

1 cup whole wheat flour
2 cups all purpose flour
1 Tbs. baking powder
1/2 tsp. baking soda
3/4 tsp. salt
1 2/3 cup sugar
3/4 cup chopped nuts, walnuts or pecans
Optional: 1/2 to 3/4 cup raisins, dried cranberries or dates
3 eggs
2 tsp. vanilla extract
6 ripe bananas, peeled and mashed
3/4 cup vegetable oil

1. Preheat oven to 350*F. Butter and flour 2 loaf pans and set aside.

2. In a large bowl, combine dry ingredients and nuts (optional dried fruit).

3. In a small bowl, whisk together eggs and vanilla.

4. In a large bowl, mash peeled bananas until uniform, and whisk in vegetable oil.

5. Make a well in the dry ingredients. Add the banana/oil mixture and the eggs/vanilla. Stir until well blended.

6. Pour mixture into pans. Bake for 50 to 60 minutes. Loaves are done when a butter knife inserted into the center of a loaf comes out clean. Cool loaves on a rack for 10 minutes before removing from pans. Enjoy!

This is a great recipe. Sometimes I make it with zucchini or applesauce with cinnamon instead of bananas.

I love using whole wheat for banana bread. My recipe uses orange juice, and butter not oil. Soooo good. The second grader in the family has been known to eat a whole loaf by himself!
