The RG is cooking and it's a surprise. He said it's something special. Whatever it is, it will be late, as I'm working until 8:30 p.m. tonight.

(146,218 posts)Tonight we will have a simple pasta with tomato/basil pesto and some sausages that were made by a local woman.
Maybe a cucumber salad, but I'm not sure yet.
Enjoy!

I also will serve some cups of left over lentil soup as a first course. It's full of yummy chard and carrots!

(146,218 posts)I love it, particularly with asparagus
. and truffles if you can get them (truffle oil?).
There is no acceptable parmesan cheese here. I have found some things that are similar, but not close enough for an acceptable risotto.
Enjoy.

(2,016 posts)Not sure yet - either Linguini and clams w/ tomatoes and artichokes... OR ... a pescatore using clams, mussels, white fish and squid. A salad to boot.
I don't think I have the squid though, so maybe just the clams tonight.

(16,334 posts)but I had this small chicken to use up and I'm just cooking for two tonight. I made an apple cabbage slaw and will roast some asparagus. Also one single sweet potato. It feels weird to cook such a small meal.
I'm going to have to start planning meals that don't require the stove.

(9,824 posts)of the garden. It was planted by birds many years ago, and the stalks are large, meaty and absolutely awesome. I just broke it into 2" pieces, drizzled with EVOO, and roasted in the oven. So delicious it made us weak in the knees!
We had leftover tacos and other veggie leftovers from SUnday, but nothing compared to the asparagus!
