what's for dinner - tuesday, april 14th

i picked up some petite sirloin steaks this weekend and decided i'm going to broil them off, top them with caramelized onions and sauteed mushrooms and serve with roasted taters and carrots.

we just got done with one huge project at work that was keeping me there an hour and a half to two hours later each night and we have another one starting today, so i'm bracing myself for another month of not really seeing my husband during the week. i have to get back in the habit of just cooking my brains out on the weekend, too.

Especially the caramelized onion part. And the roasted taters and carrots.

Me? Ehh, I guess it will just be a leftover night, considering I cooked last night and that I have to work until 10 p.m. tonight. I do have some delicious meatballs in tomato sauce in the 'frig, and I made a salad just a short time ago. There are also a variety of vegetables the RG cooked and they are in seal-a-meal bags, so all I have to do is boil them.

The RG is in Toronto, so it's just me and the kit-cats tonight.

with a spicy BBQ sauce. I made a spud salad this morning, so that'll be on the plate too. And something to do with broccoli - not sure yet what to do with that.

3. Stir fry!

Parboil it for a minute, plunge into ice water for a few minutes to keep it bright green, dry, and then stir fry with sesame oil and garlic.

If you have a can of water chestnuts, you can put them in for add'l crunch.

There are other, better recipes out there, but that's a simple one.

steamed with a little butta' and salt, and a squeeze of fresh lemon. I could eat it that way til it's comin' out my ears.

A little after 9AM the phone rang. And, 15 minutes later I was out the door to do an escorting job. I am too pooped to cook but as a diabetic I've gotta eat even when I don't feel like cooking.

Had to make more cornbread, but you know what? I'm really enjoying this pot of beans very much. Never thought I'd hear myself say that, ever. But this has been one exceptionally delicious batch. I might even be sorry to see the end of it Thursday.

Steak with onions and shrooms sounds really yummy, fizz. Enjoy while you can.
