What's for Dinner, Sat., April 18, 2015

Stuffed acorn squash. I'm stuffing the acorn squash with chopped vegetables and sausage.

Zucchini with olive oil and garlic.

Asian cole slaw, and I think I'm going to make it with fruit--a little apple and some tangelos. Use poppyseed dressing.

cold traveling to the Cherry Blossom Festival in Washington last week, so nothing better than chicken soup. Candied dehydrated ginger for dessert. Good for the digestion and nasal passages.

2. Meatball sub with sharp provolone

I made a huge antipasto today for lunch, having just come back from a butcher shop which has awesome cold cuts. So I threw in some hot cappicola and genoa, and the sharp provolone. Pepperoncini, sweet onion, black olives, etc etc. Oh, I think there was lettuce in there, but I can't be sure. Yum!

Tonight ought to finish up the last of the meatballs. Time to make another sauce...

... we had some left over pitas so I cooked some things to go with them.

I'll make the hummus tomorrow, because I bought more pitas in case we ran out.


There's no telling how long this pita cycle may last.

Asparagus with pistachios, olive oil. Broiled in an aluminum foil envelope along with the fish.

Would that be a fresh-squeezed lemonade or a lemonade concentrate from the freezer aisle?

Regardless, it's an interesting way to add flavor!

It did and made a nice crust, but the fillet flesh ended up too sweet for my taste. Next time I'll just brush some on before broiling.

7. tamales from the farmer's market

dessert was a tort, also from the market. thin layers of white cake layered with hazelnut chocolate and topped with hard caramel. i am one happy girl tonight.

a good tamale is like kryptonite to me and i regret only getting a half dozen, but i'll just get some more when i go get tortillas in the morning.
