What's for Dinner, Fri., May 15, 2015

Pork 'n beans, the last of the meals the RG left for me.

Arugula salad with pine nuts and shaved parmesan. This is arugula rustica, a type of arugula that grows wild in Italy. I've had it growing all over the place for years. It really has a bite!

Dessert: apple pie.

our friends love chinese so going to a local chinese restaurant, it isn't bad but it is a long
way from authentic .. but they like it so that is what matters ... we are going for the company and laughter
more then the food.

2. Stuffed squid tubes

A day off today, after being chased off the mountain yesterday due to snow (if ya don't leave, you're stuck up there until the snow plows do their job).

Anyway, I'll stuff the squid with ricotta, spinoci (spinach), bread crumbs, garlic and shallots. I'm still deciding whether to make a red sauce or a cream sauce. If a red sauce, then I'll put it all over a bed of linguini, if a cream sauce, I'll add some crab to the stuffing.

It's a day off... I'm still sipping the morning coffee ... I've got time to decide.

Mt. Wilson Observatory... I left work, there was 2 inches of snow. About an hour later, I hear it turned to rain.

We'll take precipitation however we can get it!

Also polenta, curried spinach and meyer lemon pound cake for dessert.

9. I made a mistake

There were no beans in the refrig seal-a-meal bags. So disappointed, 'cuz the RG's beans are the best in the world.

He left me two beautiful, light, fluffy shitaakes, though, and some fresh whole wheat pasta. While I don't normally have pasta, I decided to make it tonight. I used garlic chives, scallions, and the shitaakes. Cream sauce. May mix in some walnuts.

Now back to cleaning the kitchen before my favorite crime shows start. Yippee, it's the weekend, and I don't have to work tomorrow, just garden.
