Didn't eat with Bill earlier, the rain and my stomach are conspiring to make me feel crappy today, so I finally decided to eat something. I nuked a huge sweet potato and then added some pumpkin pie spiced butter, extra cinnamon, and a drizzle of real maple syrup. Soooooooo good!
And the "or maybe I was just really hungry" is a long standing joke around here when the meal is amazing. Our good friend Alan came for dinner one day and was raving about the meal as we all sat there stuffed....he asked all sorts of questions about how it was made, what EXACTLY was in everything, trying to figure out WHY it was so good. Finally after a good fifteen minutes of quizzing us, while raving about it's awesomeness one last time, he added "or maybe I was just really hungry" Bill and I, of course, cracked up, and it took him a second to figure out what he'd said.
So now, every time he's here and complementing the food, we hit him with "or maybe you were just really hungry"

(31,170 posts)I have trouble with orange, so I don't use it a lot, but I might be able to do a bit of marmalade.
It's weird, but I can eat any other sort of citrus, but orange really dislikes me.
I usually eat my sweet potatoes with nothing but a little butter or coconut oil. I'm not used to sweetening them at all, but I was in the mood tonight.

(31,170 posts)It's really rare that I add spices, or any sweetener with them. And I LOVE them in my usual savory roasted veggie mixes.
I was craving the spices, so I went the sweet route. Maple worked really well!

(29,098 posts)I bake the potato in the oven wrapped in foil until it gets a little ooozy. Then I top it with butter, goat cheese, a little honey, chopped oranges and some chopped pecans.
It's Amazing!

(10,170 posts)One of my favorite ways to eat sweet potatoes.
If I bake them, I add curried, julienne sliced onions sauteed in butter or ghee as a topping with a dab of sour cream. I am making this for lunch on Saturday for some girlfriends on a yoga retreat weekend. Probably adding a green salad or some sauteed Kale with other veggies to round out the meal.
