I'm starting this early because I haven't been able to sleep at night, and am getting way off schedule again.
Bill is off, and we have gift certificates for a local restaurant, so we may go out. Not sure yet.
If we do stay in, I am going to make something with carrots and apples....I broke the borrowed juicer, and have a bunch of carrot and apple that I need to do something with. I wonder how apples would work in a roast veggie mix...?
I am also wanting muffaletta. I watched a Diners Drive-In's and Dives on Hulu today, and was practically drooling over one on the show.
What's for dinner where you are?

The little chopper/food processor croaked. I'm going to have to figure out how to kind of puree the peppers without it! Oy!

I used breast strips instead of wings, same process. kick ass flavor without having to suck the meat off tiny bones!
Tonight, I have no idea yet. I'm about to put together the weekly list for shopping this afternoon, so I guess I better figure it out...

(32,083 posts)Aldi has a terrific buy on various produce this week, including broccoli. I'm not sure what I'll have along with it. Maybe tamales.
On edit: You could you could make a nice carrot-apple-raisin salad with some of those carrots and apples.

(60,014 posts)In a large pot, water sauteed one chopped sweet onion, 1 chopped sweet pepper, a 1 inch piece of ginger, chopped, 3 cloves of garlic, chopped, and 2 stalks of celery, chopped - until tender (only about 5-6 min on med high, stirring often).
Added some grinds of black pepper and a tsp of salt, tsp of garam masala, pinch of red pepper flakes. Added a carton of low sodium veggie broth (4 cups or so) and 1/2 cup OJ. Added 3 peeled, quartered potatoes and 8 peeled, quartered carrots - bring to a boil, cover and simmer 30 min.
Turn off heat - Using an immersion blender, puree - add 3/4 cups soy milk, 1 tsp garam masala and pinch of cinnamon. Stir until blended...
we served it with chopped candied walnuts on top, and some crusty bread.

(32,083 posts)Last week, I picked up a bag of carrots that were on a super-duper sale that I couldn't pass up. I have been trying to decide what to do with them, and carrot soup was on the list, along with carrot raisin salad. I think I may have to try your recipe.

(3,744 posts)Tonight though I think carné guisada. It's a great recipe that I fixed a couple of months ago and froze. It is warming up now and smells sooooo good..... Yum!
