What's for Dinner, Tues., Aug. 18, 2015

I'm working on two dishes:

--pork vindaloo in the pressure cooker

and

--eggplant curry with pecans, served over
--cauliflower bagels

I have to bake the cauliflower bagels and it's hot, but since I had a late lunch today, I'll bake after dark, when the temperatures go down.

Now, for those of you who don't know, the cauliflower bagels are pure cauliflower--no flour. They just look like bagels.

1. grilled sockeye

I made the 400 mile road trip to Phoenix to hang out with my best bud. Tonight we're having sockeye salmon (w/ Cajun spices, I think...), purple asparagus and couscous. While he's been at work today, I have been jamming on guitar all day at his house. Kinda nice turning up the volume without neighbors complaining!

4. Another simple night.

Pulled pork sandwiches and potato salad with iced tea.

Had some good news today, the housemate's broken tendon (in a finger) won't require surgery, but it's been splinted for 8 weeks, and looks like it'll need to stay splinted at least another 6.

Got the last of the canopy branches down off the cherry tree, so it's just trunk and main limbs up to 3 feet or so left. Also started cleaning up the fence line, where all of the neighbour's bushes grow out over our yard.

5. Pull Stuff from the Fridge

Had a block of cheddar cheese and a jar of diced pimentos, so made up some Southern style Pimento cheese for sandwiches. The pimento cheese spread on mega-grain bread and added some sliced tomato wedges on the side along with a few potato chips. We also finished off the last of the fried chicken left from Sunday dinner.

So I toasted a hunk of a baguette, fried up a slice of ham, put it on the bread with some pepper jack cheese and a little mayo.
Made me some fizz water with some raspberry extract for flavor.
