My husband decided to go veg after watching "Forks Over Knives" last week, and he thinks it would help his cholesterol numbers. I'm very out of practice on this particular genre of cooking, as my vegetarian daughter has been grown up and on her own for quite a while. So, although I'm surfing all over, and finding some good stuff, does anyone have any dishes they absolutely love?

(110,913 posts)Bittman's book is a good one, starting with basic fare and then listing all sorts of variations on it. It's also fairly comprehensive. I find it a little bland in the seasoning, but that's likely because I live at high altitude. Sriracha helps.

I leave out the cilantro (ick) and green beans, but it's pretty forgiving - you can add other veggies or just ignore them. Sadly it doesn't look that great in the photo. But it's to die for!

p.s. added on edit, for those who are new to vegetarian cooking, Mollie is the person credited with getting vegetarianism popular. Her first cookbook, The Enchanted Broccoli Forest, was made up from recipes from her cooperative restaurant in upstate NY, started, I think, when she was in college.
There are videos of Mollie at her site and probably youtube, also. She is a most delightful person. I have all her cookbooks and she is my "go to" person for vegetarian recipes.
Lots of very good stuff here. But tonight I'm making Cuban-style Black Beans and Rice (for two) from Cooks Illustrated (which I already had). Soaking dried beans for my first time ever today.
This looks to be a fun adventure!

(23,156 posts)Here's a favorite of mine. It's a side dish, and makes a great pot-luck bring along if you think there will be people there who are very fussy about what they eat:
Butter Bean Salad from Rachael Ray
2 cans butter beans, rinsed and drained, 15 ounces each
1/2 red bell pepper, diced
1/2 green bell pepper, diced
1/2 red onion, chopped
2 cloves garlic, peeled and minced
1 teaspoon ground cumin, 1/3 palm full
2 tablespoons extra virgin olive oil
1 large lemon, juiced
Coarse salt and freshly ground black pepper
I think next time I do my stint at the homeless shelter I'll quadruple that recipe and bring it.
