I've heard of tricks like adding a pinch of baking soda to make them caramelize more quickly, and personally, I like the flavor that lemon juice imparts on them.
Still, they take a long time.
Anybody tried doing a big batch in a slow cooker?

Sounds and looks delicious. My wife hates cooked onions and hates the way they smell cooking so I seldom get such a treat like this. That looks so good.

When I was growing up, we used to call caramelizing burnt food.

Works great. They freeze kind of well, too. I put them in small containers for burgers and stuff. The batch that comes out of the slow cooker is a lot (unless I'm making French onion soup).

as homemade French Onion soup, and it makes the house smell wonderful!
