A new one on me!

From an old cookbook titled "Recipes from the Old South". Was reading it today; I love to read cookbooks. Well, here's something I've never seen before.

Peanut hot dish.

2 cups shelled raw peanuts
2 t salt
1 cup tomatoes, peeled and chopped
2T minced onion
2T molasses
2T brown sugar
black pepper
1T worcestershire sauce
dash Tabasco
2T catsup
6 strips bacon
1/4 tsp celery seed
3/4 tsp curry powder

The peanuts are soaked all night and then steamed til tender. Everything goes into a casserole with the bacon strips on top, and it is baked for an hour.

Oy.

so doing a modified baked bean dish with them makes sense.

They are legumes, not nuts.

2. Old Georgia Favorite - Green Peanuts

My in-laws who lived in Western Tennessee used to raise peanuts in their garden. In the fall, they are pulled out of the ground and put on racks to dry. While they are still green, they can be cooked like beans (they are a member of the legume family). My in-laws would roast them after they had dried and have roasted peanuts to snack on, they never cooked them green. But I have known people from Georgia who rave over green peanuts. They are sold, canned, in Southern grocery stores.
