What's for Dinner, Mon., Sept. 28, 2015

Tossed salad with all kinds of raw vegetables, like red pepper, carrot, cucumber, radish, and maybe tomato. Avocado, too.

Pizza with roasted vegetables on it.

Buffalo meatballs that the RG made.

A Mike's Mango; I worked on arranging my storage shed all day, so this will be a toast to getting that done.

Finishing off the last of the posole. I'll probably make some tostadas with black beans, too. Chips and pico de gallo.

2. Actually cooked today

I'd made a pot of pinto beans for lunch on Sunday, but we ended up going to the bead show over in Richardson, which is on the opposite side of Dallas from where I live. It was too late to cook by the time we got back, or maybe I should say I didn't want to cook, so we had sandwiches and fruit.

Today I made salmon cakes, Texas style, using cornmeal instead of cracker crumbs. Served with sliced "Pam" potatoes (no fat), the pinto beans warmed up, sliced ripe tomatoes and buttermilk cornbread.

Ate the last of the banana bread bars I made last week. I have vowed that from now on, I will only cook a sweet dish every other week.

and the best salad you can imagine--cucumbers, tomatoes, colored peppers with homemade balsamic/garlic dressing.

now i think i'm going to make a steak sandwich. we have tri tip we grilled last night, avocado and red onion.
