What's for Dinner, Mon., June 27, 2016

Wow, hard to believe the month is almost over! Soon the tomatoes will be coming in for our friends in the warmer parts of the country.

Chicken lasagna

I have soup chicken which I'll add to a pasta with spinach and cheese, and for the Hubber, vegetarian chili from the last batch I made and froze. And cheesecake (from Publix).

(I'm making the sauce with more of my frozen tomatoes from last season. This bag: pear, cherry, Roma, Cherokee Purple.) Smells pretty darn good around here.

Again, too hot today. So a cold sandwich is in order. Provolone, cappicola, sopressata, lettuce, tomato, Vadalia, green pepper and black olives. All dressed with a vinaigrette.

The rolls are rather large, so I think that might be it for me tonight. (Been craving this for some time, so I went out and bought some good deli meats today).

My sister told me that she had a big hero to watch Game of Thrones with last night...it'll be my last night of half-decent taste buds. Gonna grab some cold cuts and a roll at Publix tomorrow night..probably some ham, salami, and cheese, and go nuts with the toppings.
