Hi, I got a big bag of toasted coconut and am stumped. Its wide strips, unsweetened. I have used the bags of sweetened shredded coconut in cookies, but this stuff is different . I've a couple bread bags full.
Aside from putting on granola or ice cream, have you thoughts or recipes? I considered making custard with it as an ingredient, but it seems there should be some thing else to do.

Add it to smoothies.
Top cereal with it.
Top ice cream with it.
Make it a drink garnish.
Scoop out the seeds of a papaya and fill it with yogurt and toasted coconut...
I could go on and on, but mmmmm... yum! Think I'll go down and eat some right outta hand, like potato chips.

(12,253 posts)Beat up an egg first with some siriracha, roll the shrimp in seasoned flour (I use gluten-free all purpose) then dip them in the egg wash, then fry them in coconut oil and serve them with jasmine rice and a fruit salsa. (Mango, tomato, kiwi, apple, onion, jalapeno pepper, cilantro-feel free to improvise on this type of salsa to your taste.
On Edit: I also fry it in organic coconut oil. Really yummy.

(11,360 posts)... is that you can use it in anything that you would use the sweetened stuff in, and also in savory applications - like curries. I haven't used toasted in curries, but it would work - just add it later in the cooking process.
