Shrimp appetizer. These are very large shrimp (4/6) and they have cocktail sauce mixed with hot pepper jelly on them.
Next up is pasta with lemon cream sauce.
The entree is fresh Coho salmon roasted on a salmon plank with herbs, lemon, and garlic.
Dessert is bread and chocolate.

(9,847 posts)a salad made from the very end of our tomato bushes from this summer. They are Black Cherry tomatoes and have really kept our salads interesting since July. The bush grew into a tree and, even with a tomato cage, grew way out of bounds. Sadly, this is the end. We cut down the tree and rounded up all the tomatoes, both green and ripe. We didn't think the green ones would ripen, but they did!!! We will have a couple more salads and then will have to start depending on store-bought stuff.

Yeah, we made 2 huge pans of lasagna for T-day (along with the usual bird and trimmings). That's it for any leftovers. Tomorrow, I cook again!

Glad you're back. Between password malfunctions, site being down, etc., I wondered if I would see some of my good C&B friends again.
I'll bet you came up with some pretty creative ways to use up all that turkey!
The RG refused to make a turkey. We had lamb roast, beef roast, shrimp, and lasagna! But no turkey, no stuffing, and not a cranberry in sight. And the sweet potatoes I bought are still on top of the refrigerator, untouched. It's OK; I'll make a sweet potato pie.

(2,016 posts)Had a cool Turkey Day. We rented a vacation house in Joshua Tree NP. LOTS o' food was made. And, I think we had way too much wine, if that is possible. The hot tub was awesome, especially at night. The desert stars were a'shining bright.
Although I didn't have turkey duty (that was the job of my best friend), I did make the butternut squash, the gravy, and I made an antipasto (for nibbling while we cooked). Lots of deli meats and cheeses, and "glass salad" - veggies marinated in glass jars. Various olives, artichokes, mushrooms, red peppers, etc etc.
Now gearing up for Christmas in Rhody. I hear my Pop is learning how to cook (since Ma died). It would be interesting to see.
ps: Trader Joes deli meats: the provolone was awesome, the proscuttio was "meh", the mortadella was not so good. I ended up getting the capicola from Stater Bros grocery - it was quite good. I can't wait for Rhody, to get the proscuitto de parma! I have a list of things to bring back to SoCal. All of them edible.
