What's for Dinner, Fri., Dec. 23, 2016

I doubled the recipe for baked spinach rice, a recipe I discovered when elleng posted the NY Time's 50 Best Recipes for 2016. You can imagine how good this is, with a cup of ricotta, a cup of parmesan, and a cup of Swiss cheese in it.

I already have some Italian sausages cooked, so it will be that, the spinach rice, and a tossed mesclun salad.

For dessert, baklava and orange spice tea.

p.s. I also made a fruit salad for over the holidays. It has blackberries, pineapple, and apple in it. The dressing is cherry yogurt, agave, and orange juice. I still have some grapefruit mint growing in my entry way that I can cut up and sprinkle over it!

I promised myself I'd stay out of my father's kitchen and let him show off how "not helpless" he is. So, tonight, he's making kielbasa and cabbage one-pot meal, with egg noodles and peas. Looking at the recipe, it has a lot butter, but at least it has onions and garlic.

Spent the day bopping around Jamestown island with Pop. Funny, but I haven't been there for over 40 years. A nice time seaside. Chowed down on an Italian grinder for lunch. Must say - good bread is the key to any sandwich, and we had it.

Bro has been working his buttski off in the pre-holiday rush (he's a grocery deli manager). Tis the season for long lines at the deli, with everyone complaining about the thickness of the prosciutto, or the taste of the "one good" premium cheeses. Heh!! Stinks to be him. I'll catch up with him late tonight, as we're going south to pick up my nephew ("NYC boy&quot from the Kingston train station.



ps: Went grocery shopping yesterday - picked up a pound of scungilli (marinated northern conch) and some live quahogs for steaming. Instead of tea last night, I had a cup of hot quahog juice. Ahhhh, nice to be "home".

I picked up huge bunches of Russian kale and turnip greens. Tonight we're having field peas,
greens, red potatoes, and cornbread.
