(31,170 posts)Bill always makes his own refried beans (he prefers black beans) but he hasn't ever done them in the crockpot. I'll pass that along.

The rain is supposed to clear out and then it should be colder. I don't think anyone has any outside activities tonight so it's a good time to stay in and eat biscuits and stew.

(12,253 posts)in your favorites. Chicken & dumplings is certainly one of ours. I do like okra as a crispy counterpoint. Enjoy that banana pudding, too. That sounds delicious!

(31,170 posts)We woke up to a beautiful dusting of snow, but it's all burned off now and really beautiful out today.
I think I am finally feeling a little better. Still not eating much, but I have a bit more energy and a lot less pain. Thank you for asking! ♥

(22,142 posts)starts a daily What's for dinner? thread . I have always loved to cook, but I get so burnt out on thinking what I want to eat. The nearest grocery store is about 20 miles away, so I have to plan for a week's worth of dinners. Well, I've always done that no matter where we lived, but it's so inconvenient here - you can't just "run out" and get something.

(22,142 posts)1 lb. bag lentils
water
3 celery tops
2 medium onions
2 carrots, cut into 3" pieces
water
salt and pepper to taste
2 T. butter
2 T. flour
1 c. water
Sort and rinse the lentils. Place in soup pot and add water (I don't know how much ). Add celery tops and onions. Bring to boil and simmer for one hour. Add the carrots and salt and pepper to taste and simmer until carrots are tender.
Make a roux of the butter and flour. Add the water and stir until smooth. Pour into the lentil soup and stir. Cook for a few minutes more.
This is the way my Mother and Grandmothers always made lentil soup. I've tried several different recipes, but always return to this one. My husband and I like to eat the whole onions, but I guess you could chop them up and the carrots too and it wouldn't change the taste at all.

(135,060 posts)I've only had black truffles once in Colombia and a few times again in Peru. Weird but it doesn't seem to be so rare there.

(31,170 posts)and I've been trying to think of fun things we can cook while he's here. Cornish hens would be something different! I haven't made any in a loooong time!

(146,218 posts)I split them, marinated in OJ, soy sauce, honey, ginger and vinegar. Then baked and basted for about 45 minutes.
They were just perfect and everyone really enjoyed them.
Just have lots of napkins and a bowl for bones in the middle of the table.

(14,889 posts)Much to my surpise I found a bag of frozen shrimp/calamari/scallops in my freezer and decided to make a pasta dish.
I quickly sauteed garlic and added green onion and red onions (frozen from a previous cooking adventure) added basil and parsley (basil again frozen in ice cube trays and parsley just flash frozen) and chopped red and orange bell peppers. Then added the pasta sauce, sliced green olive, chopped banana peppers, added some red pepper flakes, spanish smoked paprika, chili powder, salt, pepper and heated through. Turned off the heat and added the seafood. Yes, it is very yummy.

I roasted the eggplant, rather than broiling it.

(50,130 posts)Chunks of cooked chicken en casserole with blanched asparagus; artichoke hearts and diced onion that were caramelized in a little lemon, butter and garlic first, a sauce made with some mayo for a binder, lemon juice, lots of grated swiss cheese and a glog of heavy cream. Oh, and a sprinkle of dried tarragon. Baked until beginning to brown.
It was really good. There were sweet flavors (asparagus, onion, the cheese) and lemony-tart flavors. The tarragon and the swiss cheese are great together.
Love a one-dish meal!
