Meatloaf with tomato sauce.
Cubed vegetables: rutabaga, potatoes, and leeks.
Dessert: Peach sponge cake.
We had a lot of snow and have been out shoveling. It will be great to have a hot meal like this later.

(33,054 posts)Apple/Cranberry stuffed pork chop, creamed spinach and I will be making an English custard for dessert. I picked up a can of Birds custard powder , the instructions start with making it on the Hob. grin.

(7,638 posts)I made a meatloaf yesterday using ground turkey meat. I found a recipe for it on pinterest
I was wondering if it would be as good as the usual version made with ground beef. Indeed it was! nice and moist
and not as heavy. We really enjoyed it. I served it with a sweet potato puree. Tonight I am making rice with ground turkey teriyaki, carrots, brocolli and green onions. I have been on a kick trying to use ground turkey lately..

(3,040 posts)Yesterday I slow cooked a pound of deboned chicken thighs in a mixture of crushed plum tomatoes, roasted green bell peppers, 3 roasted garlic cloves, a finely chopped onion, 4 chopped garlic cloves, a few spoonfuls of tomato paste, worchestshire sauce and fresh lemon juice of a whole lemon for 8 hours with spices and a bay leaf to make shredded chicken. I removed the chicken then pulled it with a two forks. Then I spooned some of the cooking tomato sauce on top of it and left it in the fridge over night.
Then to make the buritto, I am planning on using corn tortillas, a large dollop of sour cream, the chicken, brown rice, red onions, fresh cilantro, parmesean cheese and salt and pepper. Then I will put it on my pannini press. Once it is done, I plan on finishing it with enchilada sauce (store bought) and some chopped scallions.
ETA: I got lucky I only got a few inches at most on the Jersey Shore.

(2,016 posts)I'm using pulverized shiitake mushrooms to make a stock first (rather than using chix stock). Mashed spuds with sour cream and chives, and steamed green beans.
Cara cara orange for dessert. (Fresh fruit is my fave dessert.)

(1,451 posts)Smells great and involves chicken quarters, onions, potatoes, garlic, wine. I've spent the day with the BG (beautiful granddaughter) so I'm drinking white wine and waiting for it to be served
