Also...stand??? I do all prep sitting at the kitchen table! (and I have gotten pretty damn good at getting everything to the table before I sit down - that took a while) Even thinking of getting a rolling stool for the kitchen.

better to sit to cut and slice and do all the prep work. Mine rolls up to the kitchen counter where I do all the grunt work and then roll it to the stove to do the cooking and stirring. Bad back and leg problems forced it on me to adapt to a different approach and it has worked out rather well.

although some freeze better than others. Green beans, I'm looking at your leathery asses.

Oh, green beans can be done well, especially French cut green beans and Italian green beans. It just seems all too easy to do them badly.

I try not to keep them around too long. They are very handy though and I have been known to eat some for breakfast.
