(47,675 posts)We also have the new MorningStar Farms veggie meatballs and some hoagie rolls so we might do that. There's still leftover spaghetti, but that will probably be tomorrow's dinner. Or eggs. Could be eggs. It sort of depends on when my wife and kids (one home at the moment) get home from karate. I go with the flow.

(47,675 posts)The veggie dogs that is. I wasn't hungry. I tend to eat during the day and often have not interest in food at dinner time. I'll MAKE it, but I don't always eat it. I only eat when I'm hungry.

(912 posts)I am thinking about making a batch of that and then we can just have either a sandwich with it or maybe I will make some blueberry bread. Ash Wednesday so suppose to be light and no meat for us. Why is it we go for days at a time and don't even think about eating meat, but as soon as are suppose to have a day without I have trouble thinking of a meatless dinner?

(912 posts)We have our own bushes so I am always looking for ways to use the blueberries. I think this is one of the best ever receipts I have found.
BLUEBERRY BREAD
Prep 20 minutes Bake at 350 degrees for 60 minutes
1 egg
1 cup milk
3 tablespoons vegetable oil
2 cups flour
1 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
2 cups fresh or frozen blueberries
In large mixing bowl beat egg, milk and oil. Combine the flour, sugar, baking powder and salt, gradually add to egg mixture, beating just until combined. Fold in blueberries (do not thaw if frozen)
Pour batter into a greased 9" x 5" x 3" bread pan. Bake at 350 degrees until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cooL.

(9,791 posts)I was gone all afternoon so I had to whip up something pretty quickly. DH is still a practicing Catholic but I had enough practice and gave it up years ago. I do meatless Fridays and Ash Wednesday during Lent for him so I'll be making a batch of tuna salad for Friday tomorrow.

Mac and cheese sounds really good to me right now! I've been up since 5 and I am hungry!
