For lunch, the most delicious burger. It was grass-fed beef and on top, prosciutto and cheese. It was served on one slice of raisin bread. Vegetables. Also, garnished on the side with fresh figs (sliced). The salad was edamame with garlic and red and yellow pepper.
Dinner will be Coho salmon (wild, of course). Along with that will be a large platter of vegetables: broccoli rabe, green and yellow squash, carrots, potatoes, fennel, leeks, and others.
The vegetables are arranged beautifully on a large platter. When the RG went out the door to shop this a.m., he asked what I wanted. I said, "VEGETABLES!" so he bought one of every kind at Whole Foods and fixed them for me.
Now where do you find a guy like that?

(17,516 posts)TJ is off to work later tonight and for the second Fourth of July in a row I am not working a 20 hour day, towing generators, setting up PAs and lights, and fighting logistic issues at three sites. Don't tell anyone, but I miss it.
herb roasted chicken quarter,
my choice of mashed potatoes or mac and cheese
steamed broccoli
garden salad
bakery blueberry pie slice and some low calorie vanilla bean ice cream for after.
I will have to be careful but I'm able to crunch food up on one side, Hooray! Small pieces for sure.
I am going to have a Jameson on the rocks after and see what I can of the local fireworks from my porch.
