How to Make Soup (NOT intending to challenge irisblue AT ALL!)

'Soup is a true wonder of alchemy. Together, water, onions and time turn water into broth, bland into savory and thin into thick. But for those results, process is critical: The finest soups layer flavors every step of the way. We will teach you about soup’s building blocks, then walk you through combining them with a basic recipe that will help you transform practically any ingredient into a simple, satisfying meal.'>>>

Its so versatile and the perfect comfort food. There are hot and cold versions good for any meal at anytime of the year, so you can't go wrong. Best of all, soup is cheap, nourishing and delicious, and with a little planning, a hearty soup can even be made for free.

Nice guy, friend of some friends of ours. We had arranged a grocery and cooking agreement. He'd pay into a grocery kitty and hubby (the trained chef) would do most of the grocery shopping and the cooking.

Well, he loves making soup. Makes his own chicken stock from backs and wingtips (so much gelatin!!) and makes his soup out of that. But this guy would eat all the "goodies" out of the soup (veggies and meat and pasta, etc...) and pour the remaining broth down the sink. No matter how many times we told him how much protein and nutrition he was dumping down the sink, he kept doing it. Really annoying!

Hubby's chicken stock is often jelly at room temperature! Makes for an amazing velvety mouthfeel, too.

he was a regular guest, so we started charging him for what he didn't eat. $1 for salad that was dumped. $1 for other items left on the plate.

Of course, he never paid and it got his back up a little, but I notice a slight improvement in what's left on the plate, the goal of which, of course, is -0-.

was that it was so formidable that most people wouldn't do it.

However, if you're ambitious and want some dynamite soup, have at it.

I will do my homemade stock, but I also have a friend in my refrig, one that was referred to me by one of our fellow C & B posters: My friend is "Better than Bouillion." Best damn stuff!
