One of my friends from college is coming to stay for a few days, and Bill has to work tomorrow night, so we will be eating our "dinner" early afternoon. I'm making King Ranch Enchiladas. Kevin has never had them before, so it will be something new for him! Nice and yummy after a long drive.
What's for dinner where you are?

(31,170 posts)We saute some onion, and don't add any sour cream or the extra green chilis. We also add garlic powder, black powder and a little cajun seasoning.
The biggest trick is to heat the filling with the shredded chicken before putting it in the casserole, or rolling as enchiladas. If you don't pre-warm the filling, it isn't as creamy and smooth.

(16,334 posts)sun's out and it's not too windy so it will be a nice day to grill. I'm in the mood for salad and a baked potato (I've been wanting potatoes all week!) so it'll be an easy dinner overall.

I have a big, fresh yellow squash and I am not sure what to do with it, but will do something!

(146,218 posts)One of the problems with my *freezer* is that it tends to be inconsistent. I defrosted the chops, but knew as soon as I opened the bag that they had turned. I tried washing them off, but I could still pick up the odor and knew that I just eat them (although dh might have).
I gave them to the fish, seals and pelicans.
So we are going to have Texasgal's favorite combo! Tomato soup and grilled cheese sandwiches!
All will be well.

(9,791 posts)I cooked a pound of ground chuck with some small diced onions. Added a can of drained and rinsed black beans and 1/2 a jar of Chi-Chi's mild salsa. The salad started with a bed of lettuce, chopped red onions, sliced black olives and chopped Roma tomatoes. After I added a few spoonfuls of the meat filling we topped it with shredded Mexican blend cheese and a dollop of sour cream. Delicious! I even got high fives from DH and the daughter.
