The problem is the only functionality I'd gain with one is the ability to pressure cook and I don't have much desire to do that. Another problem is if I were to replace my crock pot with one, I couldn't use my external temperature controller which I use for all sorts of things.

I like Breville products, but their model reportedly won't do yogurt, which is something I do quite often with my existing setup. For now I'm quite happy with my existing crock pot. Many newer crock pot models have precise internal temperature controllers which I think would be a good substitute for an instant pot unless you need the functionality of a pressure cooker.

I use it almost every day. I use it primarily to cook grains and potatoes. But it makes a great pot of soup in a pinch and I will admit that I have given up the wonderful but laborious mac and cheese I made on holidays. Now I just use the pot and crisp it up in the oven. Once you get comfortable with it and are open to using the manual setting and temp controls there is no end to what you can do with it. I make cheesecakes, risotto, one lemon lemon curd, elderberry syrup and of course hard boiled eggs. I even dump a tub of the Costco baby spinach in it with garlic.

I love that I can just push the button and forget about it. The food is ready and hot when I need it.

I admit I am a kitchen equipment fanatic but the instant pot is clearly in my top three.
