What's for Dinner, Thurs., Aug. 30, 2018

For an appetizer, we're making a "buffet" plate of chopped lettuce, turkey bacon bits, chopped cherry tomato, sliced red onion, and chopped avocado. Each person can make their own over a seeded "cracker", so it's still low-carb.

Salad is chopped peach, celery and fennel with toasted pistachios over the top.

The RG is making pork chops with sausage gravy. I think this is a little weird for an 84 degree day but he says he's going to make it "light," LOL.

Dessert will be watermelon and green grapes.

To drink, orange Italian soda.

Chicken Fricassee with Garlic and Sweet Garlic Confit. 100 cloves of garlic

Exquisite.

And I'm as wet as if I just got out of the tub . . . . .

From the freezer section. These had mozzerella, tomato and basil. I cooked them in Tillamoook butter and finished with garlic, torn spinach leaves and a dash of red pepper flakes. Spinach salad with almonds and cranberries and corn off the cob. Cooked the corn in butter in the micro. Takes two minutes to perfection.
Made this in the kitchen at the hostel I am staying at. Lots of people cooking and talking. Very good fellowship.
Decaf tea tonight.
