SLOW COOKER BARBECUE CHICKPEAS

Ingredients
3 15-oz cans chickpeas, rinsed and drained
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
¾ teaspoon kosher salt
1 6-oz can tomato paste
2 tablespoons maple syrup or honey
2 tablespoons blackstrap molasses
4 tablespoons apple cider vinegar
½ cup water
Instructions
1. Combine all the ingredients in a 6-quart slow cooker, stirring to combine.
2. Cook on high for 3 hours or low for 5.
3. Taste and add additional salt or vinegar if you like. If the chickpeas are dry or you prefer a saucier consistency, add more water.
Makes 6 cups.
I'm deliberately eating less meat, but wanted a BBQ sandwich. I did saute & add a half diced onion to the cooker & the kitchen does smell wonderful, but of course with onions & BBQ sauce it would.
Would some one have recommendations for meatless BBQ?

(10,171 posts)But I dislike the taste of chickpea. They are a bugger to grow in the south, we never have enough cool weather for them. They easily take over 100 days to harvest. They grow like regular bush peas though they don't vine and their yield is far less.
My better half likes them and always wants me to grow them in the spring. I grow her snap peas and she doesn't seem to notice I forget the chickpeas every year.

(32,975 posts)There are better ways to use chickpeas. 6 1/2 hrs in the crockpot hasn't done anything special enough to repeat the recipe. YMMV

(2,674 posts)I will read a cookbook before I fall asleep. My favorite are the community cookbooks, full of odd recipes and funny sayings. And sometimes you will find a "gem" recipe.

(16,334 posts)I made the beans, slaw and cornbread but you can also make it with grilled corn. Scroll down to see each recipe. I ended up making the beans in the crockpot (which I think someone mentioned in the comments) and the house smelled great!

I don't know about meatless meat for BBQ but I think I've seen people use jackfriut.
