What's for Dinner, Sun., Oct. 14, 2018

I went to a five-hour union meeting today and there was a buffet, so I already had a substantial meal: appetizers of guacamole, chips, flatbreads, cheese assortment, fruit plate. Then for the buffet, there was sliced sirloin, grilled chicken breast, grilled vegetables (mostly yellow peppers), rice, and penne in tomato sauce. The problem is that it wasn't very good (except for the guacamole, which was very tasty). Dessert was chocolate chip and oatmeal cookies and coffee, and fruit plate.

So for me tonight, leftover salmon and roasted carrots with thinly sliced fried crispy eggplant.

You'd need a cleaver or long utility knife to open them. They look sort of scary IMO, someone brave opened up & cooked the innards.

was "The JackfruitCompany" ( no bennies to me from them). It was pretty good, a touch salty for me, and I did add a couple of shakes of a hot sauce.

a nice salad with the last of the summer vegetables from the farmers market: leaf lettuce, cucumber, tomato and carrot. Also broccoli and cauliflower with Hollandaise. I had some leftover egg yolks to use because yesterday I made these for treats at church, using the whites: https://aseasyasapplepie.com/flourless-chocolate-cookies/ We have a couple people in the congregation who are gluten-intolerant so they were happy to have something kinda decadent.

missing †he soup. ground beef, 1 bell pepper, 2 little onions,+ black pepper. i used tomato soup. added celery seed, heavy cream + sugar. turned out fine. or better.
