I'm just nibbling on whatever because the RG is headed home from Vail and might arrive later tonight; no doubt he will be hungry and we may fix something late, like at 10. That's if he even makes it from the airport to home.
It's chaos here because of the snow storm. We live on a mountain and the mountain is closed off. Cars stranded everywhere, I hear from a neighbor who made it home after struggling for four hours to get here.
Might fix a ham sandwich with melted Cheddar on an English muffin to tide me over until later.

(1,089 posts)Here in Pa. Very unusual this early. The kittens enjoyed it. I made lentil soup in the Instant Pot, took 10 minutes. We has spinach salad also.
Thank you for that idea. I was wondering what I could make for the RG yet tonight. Lentil soup would be very welcoming, I would think. Plane delayed; said it won't even land until 1 a.m.
It will be a long night for all of us. My neighbor hiked through the snow to get to the mountain where his car is stuck. He has not yet returned. Another neighbor is stuck in traffic on the highways. I've been texting him.
p.s. I think we are slated for 5-8 inches of snow.

First time Ive made it and it turned out well. The peanut sauce is versatile and you make extra with the recipe. An then use as dipping sauce for veggies, etc. Its in the frig. I might have to dip veggies later.
Enjoy the snow, too ...even tho it sounds like its causing troubles.

(22,035 posts)We're at our mountain house in NE Pennsylvania and saw the forecast predicting 5"-8" of snow starting around 3:00 pm. The Landlady(!) put the ribs in the crockpot in the morning to slow cook through the day. After lunch, we took our guest to the Bethel Woods Center for the Arts to tour the Woodstock Museum. We got home at 3:00 and the snow started right on schedule.
The ribs were cooked in red wine then I put them in the oven for the final crisping. They were served with yellow rice, red beans and a lettuce/tomato/onion salad. The three of us finished the two bottles of red wine and we had fresh fruit for dessert.
When the snow stopped, we had over 9 inches! This was an unusually early snowfall. It looks lovely outside and hopefully by the morning, the roads will be plowed so we can drive back to NYC.
I hope the RG made it home!
