(6,568 posts)Takes a LONG time to french cut fresh green beans, and to chop a couple pounds of mushrooms and crisp up some onions... The end result is worth it, though.

(33,013 posts)For home, it's different. I make home made cream of mushroom soup( freakin easy-google), flash crisp heat trimmed greens beans, minced onions, I deep fry 3/4 home mage onion rings(panko). Green beans on bottom of casserole, slowly add a limited amount of soup, bake 20ish mgmt, pull out, then top with onion rings, heat through. I like that for home.

(115,793 posts)And only if the onions are super crunchy (I hate onions that actually taste like onions) and the rest of it isn't too soupy. The traditional Thanksgiving dish that I really hate is that nasty, gooey concoction of sweet potatoes and marshmallows.

RIP, Inventor of the Green-Bean Casserole
Dorcas Reilly with a huge fan. Photo: Courtesy of Campbell Soup Company
By Chris Crowley
Dorcas Reilly, who invented one of 20th-century Americas classic dishes with her green-bean casserole, passed away on October 15 at the age of 92. The dish (originally known as the green-bean bake) was created in 1955, and like a lot of classics from that era, it was the product of a corporate test kitchen.
A graduate of Drexels home-economics program, Reilly was a supervisor for Campbells Home Economics Department. The dish was, after much testing, her teams six-ingredient answer to the APs request for an easy side recipe incorporating two then-ubiquitous ingredients, Campbells cream of mushroom soup and green beans. In 1960, five years after green-bean casserole was invented, Campbells put the recipe on its cream of mushroom soup cans. And in 2002, the company donated Reillys original recipe card to the National Inventors Hall of Fame.
Since the green-bean casseroles invention, the inexpensive and uncomplicated dish has become deeply associated with the Midwest (a.k.a. the land of casseroles), to the point that people seem to think it originated there. Its as much a part of Thanksgiving as cranberry sauce, and in an obituary for Reilly posted to its website, Campbells says that in excess of 20 million Americans cook the dish during the holiday. The company has also stated that a whopping 40 percent of its cream of mushroom soup is bought specifically to make the casserole.

(10,031 posts)For the latter two, I use cream of celery soup or broccoli and cheese soup instead of cream of mushroom, or make my own white sauce. I also double up on the canned onions. I usually add shredded cheddar and sometimes sour cream, too.
I know... Unhealthy as hell. But my family loves the spinach version especially, and I only ever make it for holiday events it's been requested for or that I'm hosting.

.but never asked me to eat them. As a Southerner..those were connection to her childhood. My dad, however, was from Arkansas and fed me pickled pigs feet. I still remember that taste. Not bad, but just knowing what they are now makes me gag.
but I would still eat a pickled pigs feet/foot over GBC.

(2,220 posts)And yes, I love it. I usually make it from scratch now, using fresh green beans and my own sauce, but I still love the funky stuff. It got the name Bean Blah from a young friend who swore she hated it..but she had three helpings anyway. 😂

His family loves it.

(25,871 posts)Don't think my mom ever made it.
We always had green peas, sometimes green peas with pearl onions as the green vegetables. Mom always made brussel sprouts, but she was the only one who ate them.
And I think marshmallows in sweet potatoes is another abomination. I just open a can of sweet potatoes, warm them up, and serve. If I want them sweeter, I might sprinkle some brown sugar on top, but they are already sweet enough as is, so adding sugar is something I haven't done in years.

(17,625 posts)...and my grandma made the creamed peas and onions. now THAT I can eat!

(38,570 posts)I wouldn't make it in my home, but if served elsewhere I would eat it.
I think my issue is that I'm a bit of a purist when it comes to veggies--especially green veggies. I don't think they need that much. (I guess I have a "less is more" attitude.)
Also, on Thanksgiving, there are a lot of dishes that are creamy, filled or covered in butter, covered in gravy, etc.
One of my favorite green bean side-dishes is green beans sauteed in olive oil w/ cherry tomatoes, garlic and a little rosemary.
I've also enjoyed broccoli steamed w/ minced garlic cloves and lemon zest (with the juice of the lemon in the steaming water).
And kale sauteed in bacon fat, w/ the crispy bacon sprinkled on the top.
I don't judge people for what they like. You like what you like. I wholly recommend that everyone enjoy their holiday.

(36,827 posts)My recipe is a bit non-standard. I use fresh green beans and both fresh and dried mushrooms. The only thing that comes out of a can is the fried onions. Ive made those from scratch before and have found it isnt really worth it.
At any rate its a great dish that is popular in my house, but I wouldnt eat the version that uses canned soup and canned green beans.
