Yesterday the RG made up all the meals for today. For lunch we had cannellinis with tuna and red onion. This is his favorite Roman dish that he learned how to make when he lived in Italy. Along with that we had two platters of vegetables and fruit. On the vegetables it was asparagus and on the side, a mixture of tomatoes, Persian cucumbers, and golden beet, minced. For the fruit, it was apples and Asian pear, sliced, served with cheese.
Now, for dinner I am not exactly sure other than to say that I did get a taste of the dish and it is an all-original creation of his. It's an Asian dish: red rice with shrimp. The sauce is a little on the hot side.

Breakfast
Oatmeal for all my friends! I get a 25 pound sack of organic rolled oats from Winco.
Lunch
Soup de la SEMAINE. Or until it runs out and I make something different.
Dinner

Grilled diced meat and/or eggs cooked to order
Vegetable (varies)
Brown rice
Potatoes
Charro beans
and homemade tortillas and salsa.
Today I have to make more salsa. It went fast.

(46,088 posts)Homemade chicken stock, leek, onion, celery, carrot, parsnips, turnip, potato. Fresh thyme, bay leaf. Chopped chives on top.
Barely any cream (3 TBS each of 1/2 & 1/2 and milk)
Light but fulfilling.

(35,662 posts)yes, absolutely cream soups can be made with very little cream.
The RG likes to puree some of the vegetables to give it a creamy quality.
Creamy soups are very fulfilling in the wintertime. Yours has all the great winter vegetables for a satisfying soup.

I always add rice, onions and garlic.
The other ingredients are dependent on what's in my produce drawer, and whatever frozen stuff I can add that will bring color.
