What's for Dinner, Wed., Dec. 12, 2018

Breaded chicken cutlets, fried to a golden brown. We like to dip each bite into a little mayonnaise, a dab of which we put on the plate.

Swiss chard and ceci beans as a vegetable side dish. To make this, I bought the most beautiful bunch of Swiss chard last night when I was browsing around Whole Foods. I asked the RG to make the combo for us for dinner because we had it at a restaurant recently and it was so good. A little more on how he prepared it later.

Broccoli with garlic and hot peppers.

Dessert is fresh raspberries topped with my favorite yogurt which is super-ultra creamy. Toasted walnuts on top.

1. making ceci beans

To make the ceci beans (AKA garbanzos), I soaked them in water last night. This morning the RG fixed them the way he learned when he lived in Italy, which is with butter, anchovies, and anchovy paste. Also olive oil and a chicken bouillon cube. It doesn't take long to cook them in this mixture, just on the top of the range, stirring regularly. Then saute' the chard very lightly--not even more than a minute--and serve with a spoonful of the cecis.

We had pot roast with carrots and celery...flavored with garlic and green onions. All Gluten free... we had mashed potatoes. It tasted great!

I found two beautiful pieces of meat in the bottom of the freezer. I thawed them and they're marinating right now. They will be broiled, of course.

We have a beautiful fresh avocado and I'll put a salad in it with minced red onion, lemon, thinly sliced red and green peppers and tiny little shrimp.

Yellow rice with a few cardamon seeds for fun.

I think we're going to drink some cognac tonight to celebrate a couple of personal victories.

i made barely boiled carrots w/ butter & maple syrup. hint of maple on the chicken. cast iron so much better.

Cheddar cheese and thin sliced apple on rosemary bread. Sprinkle a little sea salt on the apples. I made a second to heat up for breakfast at break tomorrow. Not sure that sammy will make it thru the night!
