Appetizer is pork pate' with a little slice of pork belly that the RG fried to a crispy crust. Combine this on an ines rosales Mediterranean crisp. The package calls it "sweet olive oil tortas." Cornichons, also mustard and mayo. Had one already: out of this world!
Next up, a plate of roasted vegetables: eggplant, sweet potato, Brussels sprouts.
Then a salad made with finely chopped apple, zucchini, celery, and bits of Poblano for a little spiciness. This is served on a couple pieces of bibb lettuce. The dressing is made with hazelnut butter mixed with olive oil (until it's emulsified).
Pasta with chicken. The sauce also has chicken broth, anchovies, garlic, and onion. Lots of chopped, fresh basil over the top.
If we have dessert, it will be later on and will be blackberries with that fabulous creamy yogurt I love so much and toasted walnuts on top.

(32,973 posts)I pan fried some fresh bell peppers, onion, included some 'Mexican Style frozen Corn' mixed those with the bean-rice mix. Rolled that into the 3 flour tortillias, poured a canned red enchilada sauce & baked about 20 min, then put shredded sharp cheddar, bake 10 more min till hot through. Topped with cubed avocado & sour cream.

I made some Jambalaya without the rice. I was tired of how the leftovers become gooey. I made it with a roux. Meats were chicken thighs, Andouille sausage, and shrimp. Canned tomatoes, celery, bell pepper, onion and lots of garlic. It turned out like some gumbos I've had. Very tasty. My intent was to serve over rice, but we've been eating it as a hearty soup.
FLFC has been very energetic lately which gives him an appetite and has been seen eating dry dog food from his bowl without coaxing. He has just awoken from his slumber and is declaring his empty tummy as I type. There are some beef meatballs in the refrigerator that should suit his culinary needs.
