Meatloaf sandwich on cornbread. This is the cornbread I made a day or so ago and it has cheese, scallions, and hot peppers in it. Red onion on top.
Cold beer to go with and maybe some coleslaw.
Dessert: chopped pear, grapes, and yogurt on top. Toasted walnuts.

I do hope some of you food-lovers are able to try Buddha's Hand!
Usually salad is a main part of my dinners or lunches, and I often flavor them strongly with grated Asiago and olives. But with the Buddha's hand, I've been keeping them light and fresh: just lettuce, various baby greens, cucumber, a little cilantro, olive oil, balsamic vinegar, S&P, and the grated Buddha's hand.

(6,257 posts)Chicken broth and a couple of breasts and thighs in a Dutch oven on the stove. Carrots, onions and celery. Salt, pepper and poultry seasoning. After an hour or so, take out the chicken and shred and/or cube it. Put it back in.
Take a small tube of Pillsbury (or whatever!) biscuits. Roll each one flat and cut it into strips. Get the broth et al. back up to a rolling boil and add the strips. Dinner will be ready in 15-20 minutes!
