What's for Dinner, Tues., Feb. 19, 2019

Going out to a bar & grille type restaurant tonight. I think I'll order Thai chili chicken wings. My other option is the corned beef and cabbage sliders.

I want a salad but even though this place is good, I won't be happy with their salad. If I'm still hungry when I come home, I'll help myself to a salad that's already made with my spring mix.

2. Meatloaf night

I threw a couple of potatoes in the oven with the meatloaf. Vegetable to be decided later.

The secret to a great meatloaf, in my opinion, is to keep the mix wet and add plenty of umami. Tonight’s umami is browned onions, Worcestershire sauce, liquid aminos, and good old-fashioned Heinz ketchup.

onions, garlic, grated zucchini, grated carrots, etc. all sautéed in some olive oil and then allowed to cool. Grated cheese and some spice (rosemary and sage usually), of course and egg. I'll even add a touch of red wine of the mix isn't moist enough.

I refuse to add ketchup to my meatloaf. I like to serve mine w/ brown mushroom gravy.

Mashed potatoes and caramelized Brussels sprouts. Coconut cupcakes (gluten free) for dessert. It's sleeting this afternoon and I am craving comfort.

I was mightily comforted by my dinner last night, as was my spouse. Mr. Pup hummed yum-yum-yum all the way through!

after chef Lidia Bastianich. We watch her cook on PBS and whenever she tastes something she says (goes) "mmm".

So when my guy goes "mmm," I got a Lidia and I know it's good.

Mr. Pup helps out greatly in the kitchen since I have limited mobility in my hands. He was the 9th of 10 children and he appreciates the beautiful food we prepare every day.

6. stuffed peppers

orange and yellow bell peppers stuffed with: sausage, brown rice, onions, garlic, carrots, celery, black olives and Italian seasoning. There were a few spoonfuls of pasta sauce left over from yesterday so I added that too. Grated parm on top near the end of cooking.

Steamed broccoli.

Pan fried pork chops from the butcher at the little store.
Cabbage simmered with onions
Stewed apples
Stuffing (from a box)

FLFC had chicken and a taste of pork. He is not very hungry this evening.

baked in a casserole. The kale has been hiding under the snow. This is its big moment.
